This muffin was created to mimic the flavor of our sweet potato pie, which is one of our most popular pies, especially during Thanksgiving and Christmas. We believe that if you start with great ingredients and put a lot of care into the recipe, you will end up with a great product. Fresh, top quality sweet potatoes are baked in our ovens, then pureed to perfection. By adding spices, hints of lemon flavor, brown sugar and other yummy ingredients we achieve a delicious muffin. And we like to claim what little beta carotene is left in the muffin after baking, even though it is probably negated by the Triple Sec cinnamon glaze.
