The corn muffin can be eaten for breakfast, lunch or dinner. Some people enjoy having this muffin first thing in the morning and others like to have it with a good bowl of chili or another entrée at lunch or dinner. The muffin is so tender, with kernels of fresh white corn and pureed yellow corn folded into the batter. Once the muffins are out of the oven we quickly brush a thin layer of honey on them. The honey is just enough to add another level of flavor. In the winter we even offer these muffins with our soaked craisins folded in, which is very popular.
