Sweet Potato Muffin
When I had my son, Jordan, I convinced myself that when he was able to eat solid foods I would certainly give him homemade pureed sweet potatoes, since we were using the puree in our pies and cheesecakes anyway. I made extra puree just knowing that Jordan would love it. Turns out, he had no interest at all. So I had all of this extra puree and no immediate orders for sweet potato pies or cheesecakes. Time got away from me, and I did not find a use for the puree before it went bad. At that point I decided I was never going to waste sweet potato puree again. I had to come up with a new use for it. The first idea that came to my mind was a sweet potato muffin. If I could create it with a similar taste to the sweet potato pie, I knew it would be well received since our sweet potato pie was such a popular item.
People have asked me where the muffin recipe came from. I would love to be able to say that it was a family recipe, because certainly that would have saved me a lot of time and money by not having to experiment, but that was not the case. It took a lot of tries to get it just right, but once we were ready to let the public try our Sweet Potato Muffin with a Triple Sec Glaze, we were convinced we had a winner worthy of joining the Sweet Jazmines dessert family.
Ironically, my son, who I claim is the world’s pickiest eater, LOVES the muffins. He used to refer to them as “a mah nah”. We are not sure how he came to that pronunciation, but the message was received loud and clear. Now at five years old he can certainly say sweet potato muffin and you better believe that where the muffins are, Jordan will follow.
